Keto Diet: Bounty Bars

These keto Bounty bars aka Mounds bars are dairy-free, nut-free and sugar-free. A delicious high-fat treat anyone can make!

Ingredients (12 bars):

– 3 cups shredded unsweetened coconut (225 g/ 8 oz)
– ¼ cup powdered Erythritol (40 g/ 1.4 oz)
– ½ tsp vanilla powder or 1 tbsp unsweetened vanilla extract
– 1 cup coconut cream = creamed coconut milk (240 g/ 8.5 oz)
– ¼ cup extra virgin coconut oil (55 g/ 1.9 oz)
– 5 oz 85-90% dark chocolate (140 g)
– 1 ½ oz cocoa butter or coconut oil (42 g)

– I used dark chocolate because it’s low in sugar. If you prefer to use unsweetened chocolate, remember to add extra sweetener.

  2. Found this video when looking for keto sweets. I'm going to make them, but with a twist – I'm from the UK, and we have something here called a Ruffle bar – raspberry flavoured coconut centre instead of plain, covered in dark chocolate. I'm going to use an ice cube tray for bite size ones. Great video.

  3. Made these today. So good! But mine didn't get so wet so i wasn't able to mold them by hand. Pressed it into an ice cube tray and after some time in the fridge they held up fine. May just dip yhe bottom in chocolate since i seemed to have gotten more than 12 pieces. Thanks!
