Single Serve Double Chocolate Cookie
1/2 tbsp coconut oil
2 tsp coconut sugar
2 tsp cacao or cocoa
1 tsp flax with 1 tsp water
1/8 tsp baking soda
2 tbsp almond flour
1 tbsp dairy free chocolate chunks (I use Hu Kitchen)
sea salt (optional) added after baking
375F for 8 minutes

Single Serve Vanilla Cake
3 tbsp almond flour
1 egg
2 tsp coconut oil
1/4 tsp vanilla
1/8 tsp baking powder
2 tsp coconut sugar
1 tbsp coconut butter (optional for frosting)
350F for 10-12 minutes or until toothpick comes out clean

Single Serve Cheesecake Parfait
Crust:
1 tbsp almond flour
1 tbsp walnuts (or any other nut)
1 tsp almond butter (or any nut or seed butter)
1/4 tsp maple syrup
Filling:
1/4 cup coconut cream
2 tsp lemon juice
1/2 tsp maple syrup
1 tbsp dairy free cream cheese

  1. Hi Liv! I just made the double chocolate cookie and it was delicious but I would want it to be a bit sweeter. Should I add another tsp of coconut sugar or can I add tsp monkfruit sweetener?
